Biochemical Deconstruction of an Egg Sandwich

A scientific exploration of an avocado, egg, and cheese sandwich as delicious examples of lipids, proteins, and carbohydrates

My favorite sandwich always contains these three base components: avocado, a fried egg, and sourdough bread. From there, you can dress it up as you wish, perhaps adding mayonnaise, bean sprouts, lettuce, tomato, even cheese. In addition to being the best thing I have ever eaten (thank you for the introduction, posh California deli!), this sandwich can serve as the basis of a lesson on food chemistry.

We will deconstruct the base components of this sandwich from a biochemical perspective, exploring the three nutritional macromolecules: lipids, proteins, and carbohydrates. We will couple these discussion with hands-on experiments and demonstrations that highlight the specific biochemical nature of each ingredient.
